About Veg Diwani Handi
Veg Diwani Handi is a popular Indian dish made with a variety of vegetables cooked in a rich and creamy tomato-based gravy. It's often flavored with a blend of aromatic spices and can be enjoyed with rice or Indian bread.
The recipe is called veg handi as the dish is made in handi. Handi is a kind of cooking pot used in Indian cooking with a shallow depth and a wide bottom. here I have used clay handi.

Ingredients:
2 cups - mixed vegetables (carrots, peas, beans, cauliflower, capsicum etc.), chopped
3 nos. - tomatoes, finely chopped
3 nos. onions, finely chopped
½ cup - cashews, soaked and ground into a paste
2 tablespoons - oil or ghee (clarified butter)
1 teaspoon - ginger paste
1 teaspoon - garlic paste
1 nos. - black cardamom
3 nos. - green cardamom
3 nos. - cloves
1"(inch)- cinnamon
½ teaspoon - cumin seeds
½ teaspoon - turmeric powder
1 teaspoon - red chili powder (adjust to taste)
1 teaspoon - garam masala
1 teaspoon - coriander powder
½ teaspoon - cumin powder
½ cup - yogurt
½ cup - fresh cream
1 teaspoon - salt or to taste
Fresh chopped coriander leaves
Instructions:
Heat oil or ghee in a handi (a deep, wide-mouthed pot) or a thick-bottomed pan.
Fry all veggies.
Add cumin seeds and let them splutter. Then add chopped onions and sauté until they turn golden brown.
Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add chopped tomatoes and cook until they become soft and the oil starts to separate.
Add turmeric powder, red chili powder, coriander powder, and cumin powder. Sauté for a couple of minutes.
Mix in the cashew paste and cook for a few more minutes, stirring continuously.
Beat the yogurt and add it to the mixture. Cook for 2-3 minutes on low heat, stirring gently.
Add the chopped mixed vegetables and paneer cubes. Mix well so that the vegetables and paneer are coated with the spice mixture.
Cover the handi and let the vegetables cook on low heat until they are tender. You can sprinkle some water if needed.
Once the vegetables are cooked, add garam masala and salt. Mix gently.
Add fresh cream.
Garnish with chopped coriander leaves and serve hot with naan, roti, or rice.

Suggestion:
You can use a steel handi or even a regular kadai or pot or pan to make this dish.
You can add veggies of your choice like baby corn, potatoes, cauliflower, baby corn, bell pepper, carrots and corn.
If you like paneer and mushrooms then you can add them as well.
