Ingredients:


1 cup sooji (semolina)

-2 tablespoons ghee or oil

-1 teaspoon mustard seeds

1 teaspoon cumin seeds

1 onion, finely chopped

1 green chili, finely chopped (optional)

1/4 cup mixed vegetables (carrots, peas, bell peppers, etc.), finely chopped

2 cups water

Salt to taste

Chopped coriander leaves for garnish

Lemon wedges (optional)


Instructions:

  • Soak the semolina and in water for at least ½ hour.

  • The batter should be thick and grainy.

  • Transfer the batter to a large bowl. Add yogurt, mix well.

  • In a small pan, heat the oil. Add mustard seeds and let them splutter.

  • Add cumin seeds, sesame seeds, asafoetida, and curry leaves. Sauté for a few seconds until fragrant.

  • Pour the tempering into the batter and mix well.

  • Pour the batter into a greased pan, cover with a lid, and cook on low heat until the bottom is golden brown. Flip and cook the other side until fully cooked.


Tips:

  • The batter should be thick but pourable. If it is too thick, the Handvo might turn out dry. If too thin, it may not hold together well. Adjust the consistency with a little water or yogurt if needed.

  • Taste the batter before cooking and adjust the salt and spices. The batter should be slightly more seasoned than you think because the flavors will mellow out after cooking.

  • Use a heavy-bottomed pan to prevent burning and ensure even cooking. Cook on low to medium heat and cover the pan for even steam cooking.

  • To get a nice crispy crust, you can add a little extra oil to the batter. Additionally, sprinkle some sesame seeds on the top before baking or cooking.
