About Sabudana Vada
Sabudana Vada is a delicious Indian snack made from soaked sabudana (tapioca pearls), potatoes, and spices. It is popular during fasting days and is also enjoyed as a tea-time snack. Ingredients :
½ cup - tapioca pearls (soaked)
2 medium size - boiled potatoes
½ tsp - red chilli powder
½ tsp - garam masala
½ cup - coarsely grounded peanut
½ tsp - green chilli chopped
1 tbsp - coriander leaves
1 tsp - salt
Oil for frying
Instructions:
Rinse the sabudana in water until it becomes clear. Soak it in enough water to cover it completely for 4-5 hours or overnight. After soaking, drain any excess water.
In a mixing bowl, combine the soaked sabudana, mashed potatoes, roasted peanuts, chopped green chilies, grated ginger, chopped coriander leaves, cumin seeds, lemon juice, and salt. Mix everything well to form a dough.
Heat oil in a deep pan for frying.
Take a small portion of the dough and shape it into a ball. Flatten the ball slightly to form a vada.
Carefully slide the vada into the hot oil and fry on medium heat until they turn golden brown and crispy. Fry them in batches, if needed.
Remove the fried vadas and place them on a paper towel to absorb any excess oil.
Serve hot with green chutney or yogurt.

Suggestion:
You can use sago (tapioca pearls) unsoaked.
Roast and make a fine powder.
Add in boiled potatoes.
Some veggies can be tried instead of potato.
If not using it in vrat/fast , onion can also be added.
