Ingredients :

  • ½ cup - tapioca pearls (soaked)

  • 2 medium size - boiled potatoes

  • ½ tsp - red chilli powder

  • ½ tsp - garam masala

  • ½ cup - coarsely grounded peanut

  • ½ tsp - green chilli chopped

  • 1 tbsp - coriander leaves

  • 1 tsp - salt

  • Oil for frying

Instructions:

  • Rinse the sabudana in water until it becomes clear. Soak it in enough water to cover it completely for 4-5 hours or overnight. After soaking, drain any excess water.

  • In a mixing bowl, combine the soaked sabudana, mashed potatoes, roasted peanuts, chopped green chilies, grated ginger, chopped coriander leaves, cumin seeds, lemon juice, and salt. Mix everything well to form a dough.

  • Heat oil in a deep pan for frying.

  • Take a small portion of the dough and shape it into a ball. Flatten the ball slightly to form a vada.

  • Carefully slide the vada into the hot oil and fry on medium heat until they turn golden brown and crispy. Fry them in batches, if needed.

  • Remove the fried vadas and place them on a paper towel to absorb any excess oil.

  • Serve hot with green chutney or yogurt.

  • Enjoy your tasty Sabudana Vada !

Suggestion:

  • You can use sago (tapioca pearls) unsoaked.

  • Roast and make a fine powder.

  • Add in boiled potatoes.

  • Some veggies can be tried instead of potato.

  • If not using it in vrat/fast , onion can also be added.
