For dough:
1 cup - wheat flour
1 tbsp - semolina
1 tbsp - gram flour
½ tsp - carom seeds
½ tsp - salt
Water as needed
For stuffing:
1 cup - grated bottle gourd
1 tbsp - chopped onion
½ tsp - red chilli powder
½ tsp - garam masala
1 tsp - coriander powder
½ tsp - salt
1 tbsp - gram flour
1 tbsp - coriander leaves chopped

Ingredients:
Grated bottle gourd (lauki/dudhi)
Whole wheat flour (atta)
Spices like cumin seeds, red chili powder, turmeric powder, and salt
Chopped coriander leaves (optional)
Ghee or oil for cooking
Instructions:
Grate the bottle gourd and squeeze out any excess water from it. This step is crucial to prevent the paratha dough from becoming too wet.
For the dough, in a flat bowl, add atta, besan, salt, kasoori methi, ghee, and ajwain. Water as needed,knead.The dough is ready, give it a rest for 10 mins.
In a mixing bowl, combine the grated bottle gourd, whole wheat flour, spices, and chopped coriander leaves (if using). Mix everything well.
Heat 1 tsp oil in a pan,saute lauki and add gram flour , amount is mentioned above, all the spices, salt in the last.
Add chopped coriander leaves, stuffing is ready.
Divide the dough into equal-sized balls, slightly smaller than a tennis ball.
Take one dough ball and roll it into a small circle. Place a spoonful of the bottle gourd filling in the center of the rolled dough. Gather the edges of the dough and seal it, forming a stuffed ball. Flatten the stuffed ball slightly and then gently roll it out into a paratha, ensuring that the filling does not spill out.
You can use dry flour for dusting if needed.
Heat a tawa over medium-high heat. Place the rolled paratha on the hot griddle and cook until it starts to puff up and has brown spots on both sides. You can add a little oil or ghee on both sides while cooking to make it crispy.
Repeat the process with the remaining dough balls and filling.
Cook the paratha on one side until you see small bubbles forming. Then, flip it over and cook the other side.
Apply ghee or oil on both sides of the paratha and cook until it turns golden brown and crispy.
Repeat the process for the remaining dough balls.
Crispy Lauki Paratha are ready.
Enjoy with raita, dip or sauce.
Suggestion:
Another way to make lauki paratha by mixing grated bottle gourd in the flour, knead as well and make paratha.
If you do not want to roast bottle gourd, simple squeeze bottle gourd, add some gram flour(approx. 1-2 tsp ) according to the material and mix spices, then make a dough.
