Tips:
Some tips for making delicious lauki (bottle gourd) pancakes:
Grate the lauki : Grate the bottle gourd finely and then squeeze out the excess moisture using your hands. This will prevent the pancakes from becoming too watery.
Season the batter: Add spices and seasonings to the grated lauki, like cumin seeds, red chili powder, turmeric, and salt, to enhance the flavor of the pancakes.
Rice flour and Semolina : Use rice flour and semolina. You can use besan (chickpea flour) as the primary binding agent for the pancakes. It helps hold the mixture together and provides a nice texture.
Mix well : Ensure that all the ingredients are mixed thoroughly to create a consistent batter.
Don't make the batter too thin : The batter should be thick enough to form pancakes easily. If it's too thin, your pancakes may not hold their shape.
Heat and oil : Heat a non-stick pan and add a little oil before pouring the batter. This prevents the pancakes from sticking and adds a nice crispiness.
Cook on low to medium heat: Cooking on low to medium heat ensures that the pancakes cook through without burning on the outside.
Flip gently : When you see the edges of the pancakes turning golden brown and bubbles forming on the surface, gently flip them over to cook the other side.
Serve hot : Lauki pancakes are best served hot and can be accompanied with yogurt, chutney, or a side salad for added flavor.
Practice makes perfect : when it comes to making pancakes, so don't get discouraged if your first batch isn't perfect.
Enjoy your lauki pancakes!
