Here is a simple recipe of Lacchedar Rabdi
Ingredients:
1 liter full-fat milk
1/2 cup sugar (adjust according to taste)
1/2 teaspoon cardamom powder
A handful of chopped nuts (almonds, pistachios, and cashews)
Saffron strands (optional, for color and flavor)
Instructions:
Pour the milk into a heavy-bottomed pan and bring it to a boil.
Once it boils, reduce the heat to low and let it simmer. Stir the milk occasionally to prevent it from sticking to the bottom.
As the milk reduces, a layer of cream will form on the top. Gently push the cream towards the sides of the pan and continue simmering.
After about 45 minutes to an hour, the milk would have thickened considerably. Add sugar and cardamom powder. Mix well.
