About Kathal
Kathal is a seasonal fruit and is available during the initial months of the summer season in India - February, March and through the summer months. Kathal having a meaty texture, can be used as a substitute for chicken or mutton.

👉How to Make Kathal
Cut kathal or get it from market already cut into pieces.
Boil and fry kathal then combine with spices or you can marinate the kathal . this is the second method.
Add curd, tomato puree, turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala powder. Pour some water to it.

Ingredients:
500 g - jackfruit cut into pieces
3 medium size tomatoes
2 - large onions
8-10 no. - garlic cloves
1" - ginger
2 no.- green chillies
½+¾ tsp - salt (two times)
½+½ tsp - tumeric powder (two times)
2 tsp - coriander powder
1 tsp - kashmiri chilli powder
½ tsp - garam masala
½ tsp - sabji masala
1 - black cardamom
4-5 - green cardamom
1" - cinnamon stick
½ tsp - cumin
1 tsp - kasoori methi (dry fenugreek leaves)
3-4 tbsp - mustard oil
1 tbsp - chopped coriander leaves
👉 Recipe
Take ½ kg of peeled jackfruit, apply some oil to your palms and chop it.
Add it in a cooker to boil along with a ½ cup of water.
Put kathal pieces in water with ½ -½ tsp turmeric powder and salt.
Boil until a whistle blows.
Take 3 medium sized tomatoes and finely chop them.
Maka a paste of onion, tomato, garlic and ginger.
After the first whistle, turn the flame to low and cook for 4 to 5 minutes.
Heat 3 tbsp oil in a pan.
Fry boiled jackfruit till colour changes.
Add 3 to 4 tablespoons of oil in a wok and heat it.
After heating the oil, add 1 black cardamom, green cardamoms, 1"cinnamon stick and ½ teaspoon of cumin seeds to it on low flame.
Add a pinch of asafoetida and roast until brown.
Add onion & tomato paste.
Add 3 to 4 finely chopped green chilli and coriander to it and saute the spices.
Add a ½ teaspoon of turmeric powder, kashmiri red chilli powder, coriander powder, garam masala and sabji masala
Add more than a teaspoon of salt to it.
Cover and cook on low flame for 5 minutes. Stir it and again, cook while covering it.
Add 1 tsp crushed kasoori methi - dry fenugreek leaves.
Add some coriander leaves and stir well.
Kathal Masala is ready to be served, garnish it with finely chopped green coriander.
Serving 4- Serve it along with Chappati, Paratha and rice.

To begin making the Kathal Masala Recipe, let us first cut the raw jackfruit. In order to do that we have to first grease our hands and the knife as kathal is sticky.
This important tip ensures the cutting process hassle free and prevents the hands getting sticky from the natural fruit latex/sap present in the fruit.
Once cut keep aside in a bowl of water with salt so that the cut Kathal pieces do not become brown.
