Here's a simple and tasty recipe for egg fried rice:

Ingredients:

  • 2 cups cooked rice (preferably day-old) 2 eggs

  • 2 tablespoons oil (vegetable, canola, or sesame)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/2 cup frozen peas and carrots (thawed)

  • 3 tablespoons soy sauce

  • 1 tablespoon oyster sauce (optional)

  • 2 green onions, chopped

  • Salt and pepper to taste


Instructions:

1. Prepare the Rice: If you haven't already, cook your rice and let it cool. Day-old rice works best because it's less sticky.

2. Scramble the Eggs: Heat 1 tablespoon of oil in a large pan or wok over medium heat. Beat the eggs and pour them into the pan. Scramble them until fully cooked, then remove from the pan and set aside.

3. Cook the Vegetables: In the same pan, add the remaining oil. Add the chopped onion and minced garlic, and sauté until they are fragrant and the onion becomes translucent.

4. Add Peas and Carrots: Add the thawed peas and carrots to the pan and stir-fry for a couple of minutes until they're tender.

5. Add the Rice: Add the cooked rice to the pan. Break up any clumps and stir-fry, mixing well with the vegetables.

6. Season: Add soy sauce and oyster sauce (if using). Stir well to ensure the rice is evenly coated. Cook for another 2-3 minutes.

7. Combine Everything: Return the scrambled eggs to the pan, breaking them up into smaller pieces as you mix them into the rice.

8. Finish: Add the chopped green onions, and season with salt and pepper to taste. Stir everything together until well combined and heated through.

9. Serve: Serve hot and enjoy your homemade egg fried rice!
