Here's a simple recipe for Drumstick Potato Curry:


Ingredients:

  • 250 g - drumsticks, washed and cut into 2-inch pieces

  • 2 potatoes- peeled and diced

  • 1 onion - finely chopped

  • 2 tomatoes -chopped

  • 2 cloves garlic - minced

  • 1-inch ginger - grated

  • 1 teaspoon - cumin seeds

  • 1 teaspoon - mustard seeds

  • 1 teaspoon - turmeric powder

  • 1 teaspoon - coriander powder

  • 1 teaspoon - red chili powder (adjust to taste)

  • Salt to taste

  • 2 tablespoons - oil

  • Fresh coriander leaves for garnish



Instructions:

  • Heat oil in a pan and add cumin seeds and mustard seeds. Once they splutter, add chopped onions and sauté until golden brown.

  • Add minced garlic and grated ginger. Sauté for a minute until the raw smell disappears.

  • Add chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until the tomatoes become soft and the oil starts to separate.

  • Add drumstick pieces and diced potatoes to the pan. Mix well to coat them with the spices.

  • Pour enough water to cover the vegetables. Cover the pan and let it simmer until the drumsticks and potatoes are cooked and tender.

  • Check the seasoning and adjust if needed. Simmer for a few more minutes until the curry reaches your desired consistency.

  • Garnish with fresh coriander leaves.

  • Your Drumstick Potato Curry is ready to be served! Enjoy it with steamed rice or Indian bread like chapati or naan.
