Ingredients:
Bread slices
¾ cup Thick yogurt (curd)
Finely chopped vegetables (cucumber, carrot, bell pepper, onion, etc.)
Salt to taste
¼ tsp black pepper to taste
¼ tsp red chilli flakes
¼ tsp pizza seasoning
Butter or ghee (clarified butter)
Optional: Green chutney or sandwich spread
Instructions:
Take a bowl of thick yogurt (curd) and add finely chopped vegetables to it. You can use cucumber, carrot, bell pepper, onion, or any other veggies of your choice.
Mix the vegetables well with the curd. Add a pinch of salt and black pepper to taste. You can also add some chopped green chilies if you prefer it spicy.
Take two slices of bread and spread a thin layer of butter or ghee on one side of each slice. This will prevent the curd from making the bread soggy.
If you like, you can spread a layer of green chutney or sandwich spread on one slice of bread.
Now, spread the curd and vegetable mixture on the buttered side of one bread slice.
Place the other bread slice on top, buttered side down, to form a sandwich.
Toast from both sides.
Gently press the sandwich together and cut it diagonally into two triangles or into smaller bite-sized pieces.
Your curd sandwich is ready to be served! You can enjoy it as a light and refreshing snack.
Feel free to customize the recipe by adding other ingredients like grated cheese, herbs, or even a touch of your favorite spices.

Suggestion:
Add your preferred vegetables. For crunchy veggies like carrots, cabbage etc, make sure they are grated or shredded.
For veggies like tomatoes, bell peppers, cucumbers, onions etc you can finely chop them.
Season the sandwiches with the herbs and spices you like.
To make more flavorful you can spread some mayonnaise or green chutney on the bread and make an additional layer.
These curd sandwiches are best when they are served as soon as they are made.
Do not keep them stored as the veggies may release their juices and make the sandwiches soggy.
