Chilli Garlic Paratha


Chilli Garlic Paratha : is a flavorful and spicy Indian flatbread infused with garlic and chili. It's a great option for breakfast, lunch, or dinner and pairs well with yogurt, pickles, or even a side of vegetables. Here's a simple recipe to make it:


Ingredients:

2 cups - whole wheat flour

4-5 nos. - cloves of garlic (finely chopped or minced)

2-3 nos. - green chilies (finely chopped)

1 teaspoon - red chili powder (optional, for extra heat)

1 teaspoon - cumin seeds

2 tablespoons - fresh coriander leaves (finely chopped)

Salt to taste

3 cup - Water (for the batter)

Ghee or oil (for cooking)


Instructions:


1. Prepare the Dough:

In a mixing bowl, add the whole wheat flour, chopped garlic, green chilies, cumin seeds, red chili powder (if using), and salt.

Mix everything together.

Slowly add water to the mixture and make it into a lump free batter.

Add chopped coriander leaves and knead again until well incorporated.

Cover the batter with a cloth and let it rest for about 15-20 minutes.


2. Make the Parathas:

Apply a little ghee or oil on the surface of the rolled dough, fold it into half, and then into a triangle or any preferred shape.

Pour batter for a thin paratha.


3. Cook the Parathas:

Heat a tawa or flat pan over medium heat.

Pour the batter on the hot tawa and cook until you see bubbles forming on the surface.

Flip the paratha and apply some ghee or oil on the cooked side.

Flip again and apply ghee or oil on the other side as well.

Cook until both sides are golden brown and crispy.

Remove from the tawa and keep warm in a covered container or wrap in a cloth.

4. Serve:

Serve the chilli garlic paratha hot with yogurt, pickles, or any side dish of your choice.

Consistency: Ensure the liquid garlic mixture is not too watery. You can thicken it by adding some finely minced garlic, a bit of cornstarch, or flour to absorb excess moisture.

Seasoning: Add salt, finely chopped cilantro, or other spices like cumin or chili flakes to the liquid garlic mixture for added flavor.


2. Incorporating the Mixture:

Brushing Method:Instead of mixing the liquid directly into the dough, brush it onto the rolled-out dough before folding. This helps prevent the dough from becoming too wet.

Layering:Roll out a dough ball, brush with the garlic mixture, fold, and then roll out again. This technique creates layers, enhancing the flavor and texture.

Amount Control:Use a light hand when applying the garlic mixture. Too much liquid can make the dough difficult to manage.


3. For Rolling the Paratha:

Dusting:Use enough dry flour when rolling out the paratha to prevent sticking. If the dough gets too sticky, dust lightly with flour.
