Ingredients:

  • ½ cup boondi (available at Indian grocery stores)

  • 1 cups plain yogurt

  • 1/2 teaspoon roasted cumin powder

  • 1/2 teaspoon chaat masala (optional)

  • 1/4 teaspoon red chili powder (optional)

  • Salt to taste

  • Fresh cilantro leaves, chopped (for garnish)


Instructions/ Recipe

  • In a large bowl, whisk the yogurt until smooth and creamy.

  • Add the roasted cumin powder, chaat masala, red chili powder (if using), and salt. Mix well to combine the spices with the yogurt.

  • Take the boondi in a separate bowl and add enough water to soak them for a minute or two. This will soften the boondi and remove excess oil. Drain the water and gently squeeze out any excess moisture from the boondi.

  • Add the drained boondi to the seasoned yogurt mixture and mix gently.

  • Garnish the raita with freshly chopped cilantro leaves.

  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.

  • Serve chilled boondi raita as a side dish with biryani, pulao, or any rice dish of your choice.

Suggestion

You can also customize your boondi raita by adding chopped onions, grated carrots, or finely chopped cucumber for extra crunch and flavor. Enjoy!
