Aamrakhand is a popular Indian dessert made from a combination of Amrakhand, where "Aam" means mango and "Khand" refers to sweetened, strained yogurt (hung curd). It's a variation of Shrikhand, a traditional sweet dish from the states of Maharashtra and Gujarat in India. To prepare Aamrakhand, you mix ripe mango pulp with hung curd and sweeten it to taste. The addition of mango gives it a delicious mango flavor, making it a delightful treat, especially during the mango season. It's often garnished with chopped nuts like pistachios and almonds for added texture and taste. Enjoy Aamrakhand chilled, as it makes a refreshing and mouthwatering dessert.

Ingredients:

  • 2 cups plain yogurt (hung curd)

  • 1 cup ripe mango pulp

  • 1/2 cup powdered sugar (adjust to taste)

  • 1/4 teaspoon cardamom powder

  • A few saffron strands (optional)

  • Chopped pistachios and almonds for garnish




Instructions:

  • Hang the yogurt in a muslin cloth or cheesecloth for 4-5 hours to drain excess water and obtain thick hung curd.

  • For best result let the curd hung overnight.

  • In a mixing bowl, combine the hung curd, mango pulp, powdered sugar, and cardamom powder. Mix well until smooth.

  • If using saffron, soak a few strands in 1 tablespoon of warm milk and add it to the mixture for a subtle saffron flavor.

  • Taste the mixture and adjust the sweetness according to your preference.

  • Transfer the Aamrakhand to serving bowls or a single large bowl.

  • Garnish with chopped pistachios and almonds.

  • Refrigerate for a couple of hours before serving to allow the flavors to meld.

Suggestion


  • You can make Shrikhand with different flavours of fruits.

  • Jaggery powder can be replaced with sugar.

  • For best result the process of hung curd should be overnight.
